Rava Kesari – South Indian Semolina Dessert Made in 15 Minutes!
Rava Kesari (also known as Sooji Halwa in the North) is a quick, rich dessert made from semolina, ghee, and sugar—perfect for festive occasions or sweet cravings after dinner!
🧺 Ingredients:
1/2 cup rava (semolina/suji)
1/2 cup sugar
2 tbsp ghee
1 1/4 cup water
4–5 cashews
4–5 raisins
A pinch of saffron or orange food color
1/4 tsp cardamom powder
👩🍳 Instructions:
1. Heat 1 tbsp ghee in a pan, roast cashews until golden, then add raisins. Set aside.
2. In the same pan, roast rava on low flame until aromatic and slightly golden. Do not let it brown. Set aside.
3. In another pot, bring 1 1/4 cup water to a boil. Add saffron or food color.
4. Slowly add the roasted rava to boiling water, stirring continuously to avoid lumps.
5. Once rava absorbs water, add sugar and mix well.
6. Add the remaining 1 tbsp ghee, cardamom powder, and fried dry fruits.
7. Cook for 2–3 more minutes until it thickens and leaves the sides of the pan.
8. Serve warm or set it in a mould and garnish with a few dry fruits on top.
