Homemade Pav Bhaji Recipe (Serves 3–4)
🥦 Ingredients for Bhaji:
2 medium potatoes – boiled and mashed
1 cup cauliflower – chopped and boiled
½ cup green peas – boiled
1 capsicum – finely chopped
2 large tomatoes – finely chopped
1 large onion – finely chopped
1 tbsp ginger-garlic paste
2–3 tbsp butter or oil
1–2 tsp Pav Bhaji Masala
½ tsp turmeric powder
½ tsp red chili powder (adjust to taste)
Salt to taste
Water as needed
1–2 tbsp chopped coriander leaves
Lemon wedges for serving
🥖 For Pav (Bread):
4–6 pav buns
Butter for toasting
Optional: pinch of pav bhaji masala for extra flavor
👩🍳 How to Make Bhaji (Vegetable Mixture):
1. Boil vegetables – potatoes, cauliflower, and peas until soft. Mash them together and keep aside.
2. In a pan, heat butter, add chopped onions, and sauté until golden brown.
3. Add ginger-garlic paste, cook for a minute till the raw smell goes.
4. Add chopped tomatoes and cook till they become soft and mushy.
5. Add capsicum, and sauté for 2–3 minutes.
6. Add turmeric, chili powder, pav bhaji masala, and salt. Mix well.
7. Add the mashed vegetables and mix everything thoroughly.
8. Add water to adjust the consistency (semi-thick) and simmer for 7–10 minutes, stirring and mashing occasionally.
9. Add a cube of butter and fresh coriander leaves. Mix well.
🧈 How to Toast Pav:
1. Slice pav buns horizontally.
2. Heat a tawa/pan with a little butter.
3. Optional: sprinkle a pinch of pav bhaji masala on the butter.
4. Place the pav on the tawa and toast both sides till golden brown.
🥄 Serve Hot With:
A generous scoop of bhaji
Toasted pav
Finely chopped onions
Freshly chopped coriander leaves
Lemon wedges
Optional: a dollop of butter on top of bhaji.
