Mixed Vegetable Soup

🧺 Ingredients:

1 tbsp oil or butter
1 small onion (finely chopped)
2 garlic cloves (finely chopped)
1 carrot (diced)
1/4 cup beans (chopped)
1/4 cup cabbage (shredded)
1/4 cup sweet corn
1/4 cup green peas
1 tbsp cornflour (optional, for thickness)
2.5 to 3 cups water or veg stock
Salt and pepper to taste
1/2 tsp soy sauce (optional)
Fresh coriander or spring onion greens (for garnish)

🍳 Instructions:

1. Sauté Base:
Heat oil/butter in a pan. Add chopped onion and garlic. Sauté for 1-2 mins until translucent.

2. Add Veggies:
Add carrots, beans, corn, peas, and cabbage. Sauté for 2-3 minutes.

3. Add Water/Stock:
Pour in water or vegetable stock. Add salt and pepper. Cover and simmer for 10–12 minutes until vegetables are soft.

4. (Optional) Thicken Soup:
Mix cornflour with 2 tbsp water to form a slurry. Stir into soup and cook for another 2-3 minutes until slightly thick.

5. Season:
Add soy sauce if desired. Adjust salt and pepper.

6. Serve:
Garnish with chopped coriander or spring onion greens. Serve hot with toast or croutons!
