Homemade Moong Dal Khichdi (Healthy Comfort Food)

🍲 Homemade Moong Dal Khichdi (Healthy Comfort Food)

A light, nutritious one-pot Indian meal that’s easy to digest and full of protein.

Ingredients:
1/2 cup yellow moong dal
1/2 cup rice (you can also use brown rice for extra fiber)
1 tbsp ghee or olive oil
1 tsp cumin seeds (jeera)
1/4 tsp turmeric powder
1/2 tsp ginger, grated
1/2 cup chopped carrots
1/2 cup peas
1/2 cup chopped bottle gourd (lauki) or spinach
Salt to taste
3 cups water

Instructions:
1. Wash and soak rice and moong dal together for 15–20 minutes.
2. In a pressure cooker or pan, heat ghee/oil and add cumin seeds.
3. Add grated ginger and sauté for a few seconds.
4. Add chopped vegetables and sauté for 2 minutes.

5. Add turmeric, salt, soaked rice and dal. Mix well.
6. Add water and pressure cook for 3 whistles (or cook on low flame until soft).
7. Let the steam release naturally. Mix gently and serve hot.

Serving suggestion:

Top with a spoon of ghee and serve with curd or pickle.

You can also squeeze a little lemon juice for freshness.
